Filled with a rich blend of salted caramel, chocolate and Baileys liqueur atop a crunchy biscuit base, this no-bake cheesecake is the ultimate dessert to whip up this season.
Baileys chocolate salted caramel cheesecake
Ingredients
200g Digestive biscuits
75g Butter
280g cream cheese
1 tsp vanilla extract
50g icing sugar
300ml double cream
50ml Baileys Original Irish Cream
18 Baileys Chocolate Salted Caramel Truffles
Method
Start by greasing a 20cm loose bottom tin.
Next, place the 200g of digestive biscuits into a plastic bag and crush to fine crumbs with a rolling pin, then place the crumbs into a mixing bowl.
Mix the biscuit crumbs with 75g of melted butter, before pouring the mixture into the loose bottom tin and pressing the buttery biscuit mixture flat against the bottom. Place the tin into the fridge and leave to chill.
In a bowl, whisk together 280g of cream cheese, 1 tsp of vanilla extract and 50g of icing sugar. Once combined, add 300ml double cream and 50ml of Baileys Irish Cream and whisk again until the mixture has thickened.
Using a knife, chop six Baileys Chocolate Salted Caramel Truffles into pieces, then fold them into the mixture.
Spoon the mixture on top of biscuit base, smooth over and return to the fridge to chill for a few hours.
While you wait, prepare the chocolate drizzle by melting six truffles with a splash of water in a bowl over a pan of hot water until you have a smooth sauce.
Once set, retrieve your cheesecake from the fridge. Before serving, decorate with 12 halved truffles and drizzle over the cooled truffle sauce. Then, sit back and enjoy!
