To make Taylor Swift’s favorite sweet potato casserole, start by preheating the oven to 375°F.

Scrub 4 lbs of sweet potatoes, pierce them with a fork, and wrap them tightly in foil. Place them on a sheet pan and bake for about 90 minutes or until tender. Let the sweet potatoes cool before handling.

Meanwhile, process ⅓ cup oats in a food processor for about a minute. Add 4 oz of butter, ½ cup brown sugar, and ½ cup toasted pecans, pulsing five times to combine. Spread this mixture on a baking sheet and bake for 10 minutes, then crumble it and bake for another 5 minutes until golden brown.

Melt the remaining 8 oz of butter, remove the skin from the cooled sweet potatoes, and place them in a large bowl. Whisk in the sweet potatoes, melted butter, ½ cup granulated sugar, 1 tsp kosher salt, 2 tsp vanilla extract, and 4 beaten eggs until slightly lumpy.

Transfer this mixture to a greased baking dish, smoothing the surface. Top with the oat-pecan crust and bake for 12 minutes, or until heated through.

The sweet potato filling can be prepared up to two days ahead. Simply make the filling, allow it to cool, then transfer it to a casserole dish and refrigerate.

The oat-pecan crust can also be made in advance, up to two days before. Follow the recipe instructions to prepare the crust, let it cool, and store it in an airtight container at room temperature. When ready to bake, sprinkle the crust over the sweet potato filling.

Fold in 12 ounces of coarsely chopped dark chocolate and 1 cup of coarsely chopped walnuts, if desired. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches between each ball. Bake for 12 to 13 minutes, or until the cookies are just beginning to color.

After removing them from the oven, sprinkle each cookie with a few grains of coarse sea salt while they’re still hot, allowing the salt to stick. Let the cookies cool for a couple of minutes before transferring them to a cooling rack. Repeat with the remaining dough.
