Ingredients Salmon Spice Blend:
4 6-oz pieces of salmon
3 tbs avocado oil
1 tbs onion powder
1 tbs garlic powder
1/2 tbs seasoning salt
2 tsp black pepper
2 tsp salt
1/2 tsp cayenne pepper
1 tsp crushed red pepper flakes
2 tsp finely chopped parsley
4 thinly sliced pieces of lemon
Method:
1. Preheat oven to 350 degrees.
2. Cover sheet pan with parchment paper and set aside.
3. In a large bowl, combine the avocado oil, onion powder, garlic powder, season salt, black pepper, salt, cayenne pepper, pepper flakes, and chopped parsley and mix well.
4. Place salmon portions into the spice blend and coat well. Place each piece of seasoned salmon on the sheet pan that is covered with parchment paper.
5. Place one slice of lemon on each piece of salmon, place in the oven for 15 minutes for medium rare, 20 minutes for well done, and remove from the oven and top with Alfredo sauce.
For Alfredo Sauce:
1 large onion chopped
3 tbs unsalted butter
4 oz cream cheese
2 tsp seafood bouillon base
1/2 tbs onion powder
1/2 tbs garlic powder
1/2 tsp finely chopped parsley
1 tsp black pepper
1 tsp salt
1/2 tsp crushed red pepper flakes
Pinch of cayenne pepper
1/2 tbs minced garlic
2 cups heavy whipping cream
1 lb extra-large shrimp peeled and deveined
Method:
1. Place a large skillet over medium heat, add the butter and cream cheese, and allow both to soften and melt.
2. Add the seafood bouillon base and mix well. Add the onion powder, garlic powder, pepper, salt pepper flakes, cayenne pepper, and chopped parsley and mix well.
3. Slowly pour in whipping cream and continue to stir until the mixture begins to simmer.
4. Add the shrimp to the sauce and add the water to thin out the sauce.
5. Allow to simmer for 7-10 minutes and serve over the salmon.
For Sautéed Drunken Spinach:
1 tbs unsalted butter
2 tbs extra virgin olive oil
1 tbs diced onion
2 cloves garlic minced
1 . lbs. fresh baby spinach
1/2 tbs crushed red pepper flakes
2 tbs minced shallots
Salt to taste
Pepper to taste
Method:
1. Place a large skillet coated with olive oil over medium-high heat, add the minced shallots, and allow to sauté for 1-2 minutes.
2. Add the minced garlic, onions, pepper, red pepper flakes and stir evenly.
3. Add the fresh spinach to the pan, mix, and allow the spinach to cook down for 4-5 minutes, and serve along with the salmon with Alfredo sauce.
